Ingredients
- 2 cups grated coconut
- 1 stalk lemongrass, thinly sliced
- 4 kaffir lime leaves, finely chopped
- 1 inch galangal, grated
- 3 shallots, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon sugar
- Salt to taste
- 2 tablespoons oil
Instructions
- In a pan, heat the oil over medium heat.
- Add the lemongrass, kaffir lime leaves, galangal, shallots, and garlic. Sauté until fragrant.
- Add the chili powder, turmeric powder, sugar, and salt. Mix well.
- Add the grated coconut and continue to cook until the coconut turns golden brown and fragrant.
- Remove from heat and let it cool before serving.
