Ingredients

  • 2 cups grated coconut
  • 1 stalk lemongrass, thinly sliced
  • 4 kaffir lime leaves, finely chopped
  • 1 inch galangal, grated
  • 3 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. In a pan, heat the oil over medium heat.
  2. Add the lemongrass, kaffir lime leaves, galangal, shallots, and garlic. Sauté until fragrant.
  3. Add the chili powder, turmeric powder, sugar, and salt. Mix well.
  4. Add the grated coconut and continue to cook until the coconut turns golden brown and fragrant.
  5. Remove from heat and let it cool before serving.
