Spiced Eggplant Curry (ಬದನೇಕಾಯಿ ಕಾರಿ)

Ingredients

  • 2 large eggplants, diced
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan and add the mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until they turn golden brown.
  2. Add the diced eggplants and cook until they are tender.
  3. Stir in the turmeric powder, red chili powder, and coriander powder. Mix well.
  4. Pour in the tomato puree and cook for a few minutes until the raw smell disappears.
  5. Add the coconut milk, garam masala, and salt. Simmer for 5-7 minutes.
  6. Garnish with fresh cilantro and serve hot with rice or roti.
