ಬದನೇಕಾಯಿ ಕಾರಿ (Spiced Eggplant Curry) is a traditional Udupi Cuisine dish that is bursting with flavors and spices. This delicious curry is a perfect combination of tender eggplant, aromatic spices, and a rich, creamy gravy.
Ingredients
- 2 large eggplants, diced
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup coconut milk
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan and add the mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until they turn golden brown.
- Add the diced eggplants and cook until they are tender.
- Stir in the turmeric powder, red chili powder, and coriander powder. Mix well.
- Pour in the tomato puree and cook for a few minutes until the raw smell disappears.
- Add the coconut milk, garam masala, and salt. Simmer for 5-7 minutes.
- Garnish with fresh cilantro and serve hot with rice or roti.
