Ingredients

  • 500g white fish fillets, such as snapper or cod
  • 1 cup coconut milk
  • 2 eggs
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon lime juice
  • 4 kaffir lime leaves, finely sliced
  • 1 red chili, finely chopped
  • Banana leaves for wrapping

Instructions

  1. In a food processor, blend the fish, coconut milk, eggs, red curry paste, fish sauce, sugar, and turmeric powder until smooth.
  2. Transfer the mixture to a bowl and stir in the lime juice, kaffir lime leaves, and red chili.
  3. Cut the banana leaves into 8-inch squares and briefly pass them over an open flame to soften them.
  4. Place a spoonful of the fish mixture onto each banana leaf square and fold to form a packet.
  5. Grill the packets over medium heat for 10-15 minutes, or until the fish custard is cooked through.
