Ingredients
- 500g white fish fillets, such as snapper or cod
- 1 cup coconut milk
- 2 eggs
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1 teaspoon turmeric powder
- 1 teaspoon lime juice
- 4 kaffir lime leaves, finely sliced
- 1 red chili, finely chopped
- Banana leaves for wrapping
Instructions
- In a food processor, blend the fish, coconut milk, eggs, red curry paste, fish sauce, sugar, and turmeric powder until smooth.
- Transfer the mixture to a bowl and stir in the lime juice, kaffir lime leaves, and red chili.
- Cut the banana leaves into 8-inch squares and briefly pass them over an open flame to soften them.
- Place a spoonful of the fish mixture onto each banana leaf square and fold to form a packet.
- Grill the packets over medium heat for 10-15 minutes, or until the fish custard is cooked through.
