Spiced Ghee Rice (ಸ್ಪೈಸ್ಡ್ ಗೀ ರೈಸ್)
Spiced Ghee Rice is a delicious and aromatic rice dish from Udupi Cuisine. It is made with fragrant spices and clarified butter, giving it a rich and flavorful taste.
Ingredients
- 2 cups basmati rice
- 3 tablespoons ghee
- 1 cinnamon stick
- 3 cloves
- 2 cardamom pods
- 1 teaspoon cumin seeds
- 1 onion, thinly sliced
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 4 cups water
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat ghee over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for a minute until fragrant.
- Add the sliced onion, green chilies, and ginger-garlic paste. Sauté until the onions are golden brown.
- Stir in the drained rice and sauté for 2-3 minutes.
- Pour in the water, add salt, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and serve hot.
