Spiced Ghee Rice (ಸ್ಪೈಸ್ಡ್ ಗೀ ರೈಸ್)

Ingredients

  • 2 cups basmati rice
  • 3 tablespoons ghee
  • 1 cinnamon stick
  • 3 cloves
  • 2 cardamom pods
  • 1 teaspoon cumin seeds
  • 1 onion, thinly sliced
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 4 cups water
  • Salt to taste

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee over medium heat. Add the cinnamon stick, cloves, cardamom pods, and cumin seeds. Sauté for a minute until fragrant.
  3. Add the sliced onion, green chilies, and ginger-garlic paste. Sauté until the onions are golden brown.
  4. Stir in the drained rice and sauté for 2-3 minutes.
  5. Pour in the water, add salt, and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  6. Fluff the rice with a fork and serve hot.
