Ingredients
- 2 cups basmati rice
- 3 tablespoons olive oil
- 1 onion, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
- 1/4 cup slivered almonds
- 1/4 cup chopped dried apricots
- 1/4 cup golden raisins

- 3 cups vegetable broth
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the spices (cumin, coriander, cinnamon, allspice, and cardamom) to the pot and cook for 1-2 minutes until fragrant.
