Spiced Jordanian Rice Pilaf (روز بالتوابل الأردنية)

Ingredients

  • 2 cups basmati rice
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1/4 cup slivered almonds
  • 1/4 cup chopped dried apricots
  • 1/4 cup golden raisins
  • Salt and pepper to taste
  • 3 cups vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the spices (cumin, coriander, cinnamon, allspice, and cardamom) to the pot and cook for 1-2 minutes until fragrant.
