Spiced Lamb And Apricot Tagine

Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/2 cup dried apricots
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large tagine or Dutch oven, heat the olive oil over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Stir in the ground cumin, coriander, cinnamon, ginger, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  5. Return the lamb to the pot and add the dried apricots and chicken broth.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste before serving.
