Spiced Lamb and Chickpea Stew (Mafé aux Pois Chiches)

Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup smooth peanut butter
  • 2 cups beef or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Season the lamb chunks with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the lamb in batches and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, ground cumin, paprika, and cayenne pepper, and cook for 1 minute.
  5. Add the browned lamb back to the pot, along with the diced tomatoes, peanut butter, and broth. Stir to combine.
  6. Bring the stew to a simmer, then reduce the heat to low and cover. Let it cook for 1 1/2 hours, stirring occasionally.
  7. After 1 1/2 hours, add the drained and rinsed chickpeas to the pot and continue to cook for an additional 30 minutes, uncovered, until the lamb is tender and the sauce has thickened.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Serve the Mafé aux Pois Chiches hot, accompanied by rice or crusty bread.
