Spiced Lamb and Chickpea Stew (Mafé aux Pois Chiches)

Ingredients
- 1 1/2 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup smooth peanut butter
- 2 cups beef or vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Season the lamb chunks with salt and pepper.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the lamb in batches and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, paprika, and cayenne pepper, and cook for 1 minute.
- Add the browned lamb back to the pot, along with the diced tomatoes, peanut butter, and broth. Stir to combine.
- Bring the stew to a simmer, then reduce the heat to low and cover. Let it cook for 1 1/2 hours, stirring occasionally.
- After 1 1/2 hours, add the drained and rinsed chickpeas to the pot and continue to cook for an additional 30 minutes, uncovered, until the lamb is tender and the sauce has thickened.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Mafé aux Pois Chiches hot, accompanied by rice or crusty bread.
