Spiced Lamb and Lentil Soup (Toyugun Shorbası)

Ingredients

  • 1 lb lamb, cubed
  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and garlic to the pot and sauté until softened.
  3. Stir in the ground cumin, paprika, and turmeric, and cook for 1-2 minutes until fragrant.
  4. Add the red lentils and broth to the pot. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lamb is tender and the lentils are cooked through.
  6. Adjust the seasoning if needed and serve the Toyugun Shorbası hot, garnished with fresh cilantro.
