Spiced Lamb and Lentil Soup (Toyugun Shorbası)
Toyugun Shorbası is a traditional Azerbaijani spiced lamb and lentil soup that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 lb lamb, cubed
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides.
- Add the chopped onion and garlic to the pot and sauté until softened.
- Stir in the ground cumin, paprika, and turmeric, and cook for 1-2 minutes until fragrant.
- Add the red lentils and broth to the pot. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lamb is tender and the lentils are cooked through.
- Adjust the seasoning if needed and serve the Toyugun Shorbası hot, garnished with fresh cilantro.
