Spiced Lamb and Lentil Stew (Mafé)
Mafé is a traditional Malian dish that features tender spiced lamb and hearty lentils in a rich and flavorful stew. This dish is perfect for a cozy family dinner or for entertaining guests with its aromatic and comforting flavors.
Ingredients
- 1 1/2 lbs boneless lamb, cut into 1-inch pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 cup dried brown lentils, rinsed
- 4 cups chicken or vegetable broth
- 2 tablespoons peanut butter
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the lamb pieces and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, tomato paste, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the browned lamb to the pot. Add the rinsed lentils and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 45-50 minutes, or until the lamb and lentils are tender.
- Stir in the peanut butter and season with salt and pepper to taste. Simmer for an additional 5-10 minutes to allow the flavors to meld together.
- Serve the Mafé hot, garnished with chopped fresh cilantro. Enjoy with rice or crusty bread.
