Spiced Lamb and Lentil Stew (Mafé)

Ingredients

  • 1 1/2 lbs boneless lamb, cut into 1-inch pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 cup dried brown lentils, rinsed
  • 4 cups chicken or vegetable broth
  • 2 tablespoons peanut butter
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb pieces and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, tomato paste, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Return the browned lamb to the pot. Add the rinsed lentils and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 45-50 minutes, or until the lamb and lentils are tender.
  4. Stir in the peanut butter and season with salt and pepper to taste. Simmer for an additional 5-10 minutes to allow the flavors to meld together.
  5. Serve the Mafé hot, garnished with chopped fresh cilantro. Enjoy with rice or crusty bread.
