Spiced Lamb and Potato Casserole (Casserole d'Agneau et de Pommes de Terre Épicée)

Ingredients

  • 2 lbs lamb, cut into cubes
  • 4 large potatoes, peeled and sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe casserole dish, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the dish and set aside.
  3. In the same casserole dish, sauté the onions and garlic until softened.
  4. Add the spices (cumin, coriander, turmeric, cinnamon, and cayenne pepper) to the onions and garlic, and cook for 1-2 minutes until fragrant.
  5. Return the lamb to the casserole dish and add the sliced potatoes. Pour in the chicken or vegetable broth. Season with salt and pepper.
  6. Cover the casserole dish and place it in the preheated oven. Bake for 1 hour, or until the lamb is tender and the potatoes are cooked through.
  7. Remove from the oven and let it rest for a few minutes before serving.
