Spiced Lamb and Potato Casserole (Casserole d'Agneau et de Pommes de Terre Épicée)

Ingredients
- 2 lbs lamb, cut into cubes
- 4 large potatoes, peeled and sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe casserole dish, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the dish and set aside.
- In the same casserole dish, sauté the onions and garlic until softened.
- Add the spices (cumin, coriander, turmeric, cinnamon, and cayenne pepper) to the onions and garlic, and cook for 1-2 minutes until fragrant.
- Return the lamb to the casserole dish and add the sliced potatoes. Pour in the chicken or vegetable broth. Season with salt and pepper.
- Cover the casserole dish and place it in the preheated oven. Bake for 1 hour, or until the lamb is tender and the potatoes are cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
