Spiced Lamb Curry (ГӀуламаш)
ГӀуламаш (Spiced Lamb Curry) is a traditional dish from Chechen cuisine, known for its rich and aromatic flavors. This hearty and comforting curry is perfect for a cozy family dinner or a special gathering.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 1 cup plain yogurt
- 2 tbsp vegetable oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are soft and translucent.
- Add the minced garlic and sauté for another minute.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the diced tomatoes, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt. Cook for a few minutes until the tomatoes start to break down.
- Pour in the plain yogurt and stir well to combine. Reduce the heat to low, cover the pot, and let the curry simmer for about 1 hour, or until the lamb is tender.
- Once the lamb is cooked through and the curry has thickened, remove from heat and garnish with chopped fresh cilantro.
