Spiced Lamb Curry (ГӀуламаш)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 cup plain yogurt
  • 2 tbsp vegetable oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are soft and translucent.
  2. Add the minced garlic and sauté for another minute.
  3. Add the lamb cubes to the pot and brown them on all sides.
  4. Stir in the diced tomatoes, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt. Cook for a few minutes until the tomatoes start to break down.
  5. Pour in the plain yogurt and stir well to combine. Reduce the heat to low, cover the pot, and let the curry simmer for about 1 hour, or until the lamb is tender.
  6. Once the lamb is cooked through and the curry has thickened, remove from heat and garnish with chopped fresh cilantro.
