Spiced Lamb Kebabs (Kuzu Şiş Kebap)

Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp plain yogurt
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 lemon, juiced
  • 4 metal or soaked wooden skewers

Instructions

  1. In a large bowl, combine the chopped onion, minced garlic, olive oil, yogurt, paprika, cumin, black pepper, salt, cayenne pepper, and lemon juice. Mix well to form the marinade.
  2. Add the lamb cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto the skewers, leaving a small space between each piece.
  4. Grill the kebabs for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and has a nice charred exterior.
  5. Remove the kebabs from the grill and let them rest for a few minutes before serving.
