Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup pomegranate juice
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 cup pomegranate arils (seeds)
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, mix together the ground lamb, onion, garlic, cumin, coriander, cinnamon, cayenne pepper, parsley, salt, and pepper. Divide the mixture and shape into 8 elongated patties.
  2. In a small saucepan, combine the pomegranate juice, honey, and lemon juice. Bring to a simmer over medium heat and cook for 10-12 minutes, or until the glaze has thickened. Stir in the pomegranate arils and set aside.
  3. Heat the olive oil in a large skillet over medium-high heat. Cook the lamb kofta for 3-4 minutes per side, or until browned and cooked through.
  4. Drizzle the pomegranate glaze over the cooked kofta and serve hot.
