Ingredients
- 1 lb ground lamb
- 1 small onion, finely chopped

- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/2 cup pomegranate juice
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/4 cup pomegranate arils (seeds)
- 1 tbsp olive oil
Instructions
- In a large bowl, mix together the ground lamb, onion, garlic, cumin, coriander, cinnamon, cayenne pepper, parsley, salt, and pepper. Divide the mixture and shape into 8 elongated patties.
- In a small saucepan, combine the pomegranate juice, honey, and lemon juice. Bring to a simmer over medium heat and cook for 10-12 minutes, or until the glaze has thickened. Stir in the pomegranate arils and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Cook the lamb kofta for 3-4 minutes per side, or until browned and cooked through.
- Drizzle the pomegranate glaze over the cooked kofta and serve hot.
