Ingredients
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 1/2 cup pomegranate molasses
- 1/4 cup water
- 1 tbsp olive oil
Instructions
- In a large bowl, mix together the ground lamb, onion, garlic, parsley, cumin, coriander, cinnamon, salt, and pepper until well combined.
- Form the lamb mixture into small, elongated kofta shapes and set aside.
- In a small saucepan, combine the pomegranate molasses and water. Bring to a simmer over medium heat and cook for 5-7 minutes, until the glaze thickens slightly. Remove from heat and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the kofta and cook for 3-4 minutes per side, until browned and cooked through.
- Drizzle the kofta with the pomegranate glaze and serve hot.
