Spiced Lamb Kofta with Pomegranate Glaze (Kofta bel Debs el-Rumman)

Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 1/2 cup pomegranate molasses
  • 1/4 cup water
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, mix together the ground lamb, onion, garlic, parsley, cumin, coriander, cinnamon, salt, and pepper until well combined.
  2. Form the lamb mixture into small, elongated kofta shapes and set aside.
  3. In a small saucepan, combine the pomegranate molasses and water. Bring to a simmer over medium heat and cook for 5-7 minutes, until the glaze thickens slightly. Remove from heat and set aside.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the kofta and cook for 3-4 minutes per side, until browned and cooked through.
  5. Drizzle the kofta with the pomegranate glaze and serve hot.
