Spiced Lamb Koftas with Pomegranate Glaze (Kebab-e Barg)

Ingredients

  • 1 lb ground lamb
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup pomegranate molasses
  • 1/4 cup olive oil

Instructions

  1. In a large bowl, mix together the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper.
  2. Divide the mixture into 8 equal portions and shape each portion into a long, thin kofta shape.
  3. Heat the olive oil in a large skillet over medium heat. Cook the koftas for 12-15 minutes, turning occasionally, until browned and cooked through.
  4. While the koftas are cooking, heat the pomegranate molasses in a small saucepan over low heat until it becomes a thick glaze.
  5. Drizzle the pomegranate glaze over the cooked koftas and serve hot.
