Spiced Lamb Skewers (Brochettes d'Agneau Épicées)
Brochettes d'Agneau Épicées, or Spiced Lamb Skewers, are a popular dish in Burkinabé cuisine. The succulent and flavorful lamb, combined with a blend of aromatic spices, makes for a delicious and satisfying meal.
Ingredients
- 1.5 lbs (700g) lamb, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ground coriander
- 1/4 cup (60ml) olive oil
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, mix the chopped onion, minced garlic, ground cumin, paprika, cayenne pepper, ground coriander, olive oil, salt, and pepper.
- Add the lamb cubes to the marinade and coat them evenly. Let it marinate for at least 30 minutes.
- Thread the marinated lamb cubes onto the soaked wooden skewers.
- Heat a grill pan or stovetop grill over medium-high heat. Cook the skewers for about 3-4 minutes per side, or until the lamb is cooked to your desired doneness.
- Remove the skewers from the heat and let them rest for a few minutes before serving.
