Ingredients
- 1.5 lbs lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 tomatoes, chopped
- 2 cups beef broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the carrots, potatoes, and tomatoes.
- Pour in the beef broth and add the cumin, paprika, coriander, turmeric, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for 2 hours, or until the lamb is tender.
- Garnish with fresh cilantro before serving.
