Spiced Lentil and Vegetable Pilaf (Mujaddara Bil-Khudar)
Mujaddara Bil-Khudar is a traditional Libyan dish that combines spiced lentils and vegetables to create a flavorful and satisfying pilaf.
Ingredients
- 1 cup lentils
- 2 onions, thinly sliced
- 2 carrots, diced
- 1 cup basmati rice
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 3 tablespoons olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes. Remove half of the onions and set aside for garnish.
- Add the remaining olive oil to the pot and sauté the carrots until they begin to soften, about 5 minutes.
- Stir in the lentils, cumin, coriander, cinnamon, and cayenne pepper. Cook for 2 minutes to toast the spices.
- Add the rice and vegetable broth to the pot. Season with salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Fluff the pilaf with a fork and top with the reserved caramelized onions before serving.
