Spiced Lentil and Vegetable Pilaf (Mujaddara Bil-Khudar)

Ingredients

  • 1 cup lentils
  • 2 onions, thinly sliced
  • 2 carrots, diced
  • 1 cup basmati rice
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 3 tablespoons olive oil

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes. Remove half of the onions and set aside for garnish.
  2. Add the remaining olive oil to the pot and sauté the carrots until they begin to soften, about 5 minutes.
  3. Stir in the lentils, cumin, coriander, cinnamon, and cayenne pepper. Cook for 2 minutes to toast the spices.
  4. Add the rice and vegetable broth to the pot. Season with salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  5. Fluff the pilaf with a fork and top with the reserved caramelized onions before serving.
