Spiced Lentil and Vegetable Soup (Toyugun Shorbası)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 tomato, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the carrots, potatoes, and tomato to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the lentils, cumin, turmeric, and paprika. Cook for another 2 minutes.
  4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat, cover, and simmer for 30 minutes or until the lentils and vegetables are tender.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
