Spiced Lentil and Vegetable Soup (Toyugun Shorbası)
Toyugun Shorbası, also known as Spiced Lentil and Vegetable Soup, is a traditional Azerbaijani dish that is both hearty and flavorful. This nutritious soup is perfect for a cozy family meal or to warm up on a cold day.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 tomato, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the carrots, potatoes, and tomato to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the lentils, cumin, turmeric, and paprika. Cook for another 2 minutes.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat, cover, and simmer for 30 minutes or until the lentils and vegetables are tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
