Spiced Lentil Curry (liwonde National Park Lentils)

Ingredients

  • 1 cup Liwonde National Park Lentils
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  3. Stir in the diced tomatoes and cook for 5 minutes.
  4. Add the Liwonde National Park Lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
  5. Season with salt to taste.
