Ingredients
- 1 cup Liwonde National Park Lentils
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, grated ginger, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Stir in the diced tomatoes and cook for 5 minutes.
- Add the Liwonde National Park Lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt to taste.
- Garnish with chopped fresh cilantro before serving.
