Spiced Lentil Powder (kandi Podi)
Spiced Lentil Powder, also known as Kandi Podi, is a popular and flavorful condiment in Telugu cuisine. It is made with roasted lentils and a blend of aromatic spices, making it a versatile and delicious addition to many dishes.
Ingredients
- 1 cup split pigeon peas (toor dal)
- 6-8 dried red chilies
- 1/4 cup sesame seeds
- 1 tsp cumin seeds
- 1/2 tsp asafoetida (hing)
- 1 tsp salt
- 2 tbsp oil
Instructions
- Heat a pan over medium heat and dry roast the split pigeon peas until they turn golden brown and aromatic. Remove from the pan and set aside to cool.
- In the same pan, dry roast the dried red chilies, sesame seeds, and cumin seeds until the sesame seeds start to pop. Remove from the pan and let it cool.
- Once cooled, transfer the roasted lentils, red chilies, sesame seeds, and cumin seeds to a food processor or blender. Add the asafoetida and salt. Grind into a coarse powder.
- Heat the oil in a small pan and pour it over the ground powder. Mix well to combine.
- Allow the spiced lentil powder to cool completely before storing it in an airtight container.
