Baharatlı Mercimek Çorbası, or Spiced Lentil Soup, is a classic Turkish dish that is both comforting and flavorful. This hearty soup is packed with protein and warm spices, making it the perfect dish for a cold day.
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground turmeric
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground cumin, paprika, and turmeric, and cook for another minute.
- Add the diced carrot and potato, and cook for 5 minutes.
- Rinse the red lentils and add them to the pot.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat, cover the pot, and simmer for 20 minutes or until the lentils and vegetables are tender.
- Season with salt and pepper to taste.
- Remove from heat and let the soup cool slightly before serving.
