Spiced Lentil Soup (Baharatlı Mercimek Çorbası)

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground turmeric
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the ground cumin, paprika, and turmeric, and cook for another minute.
  4. Add the diced carrot and potato, and cook for 5 minutes.
  5. Rinse the red lentils and add them to the pot.
  6. Pour in the vegetable broth and bring the soup to a boil.
  7. Reduce the heat, cover the pot, and simmer for 20 minutes or until the lentils and vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Remove from heat and let the soup cool slightly before serving.
