Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Stir in the red lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped cilantro.
