Spiced Lentil Stuffed Pastries (bhojpuri Kachori)
Spiced Lentil Stuffed Pastries, also known as Bhojpuri Kachori, are a popular snack in Bhojpuri cuisine. These crispy and flavorful pastries are filled with a delicious spiced lentil mixture and are perfect for serving as an appetizer or snack.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup ghee (clarified butter)
- 1 cup yellow lentils, soaked and drained
- 1 teaspoon cumin seeds
- 1 teaspoon ginger, grated
- 1 teaspoon green chili, finely chopped
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Oil for frying
Instructions
- In a bowl, mix the all-purpose flour and ghee. Add water as needed to make a stiff dough. Cover and let it rest for 15 minutes.
- In a pan, heat some oil and add cumin seeds. Once they splutter, add the grated ginger and chopped green chili. Sauté for a minute.
- Add the soaked lentils, coriander powder, turmeric powder, and salt. Cook until the lentils are soft and the mixture is dry. Let it cool.
- Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the lentil mixture in the center and seal the edges to form a stuffed pastry.
- Heat oil in a deep pan and fry the stuffed pastries until golden brown and crispy.
- Remove and drain on paper towels. Serve hot with chutney or sauce.
