Spiced Lentil Stuffed Pastries (bhojpuri Kachori)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup ghee (clarified butter)
  • 1 cup yellow lentils, soaked and drained
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 teaspoon green chili, finely chopped
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the all-purpose flour and ghee. Add water as needed to make a stiff dough. Cover and let it rest for 15 minutes.
  2. In a pan, heat some oil and add cumin seeds. Once they splutter, add the grated ginger and chopped green chili. Sauté for a minute.
  3. Add the soaked lentils, coriander powder, turmeric powder, and salt. Cook until the lentils are soft and the mixture is dry. Let it cool.
  4. Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the lentil mixture in the center and seal the edges to form a stuffed pastry.
  5. Heat oil in a deep pan and fry the stuffed pastries until golden brown and crispy.
  6. Remove and drain on paper towels. Serve hot with chutney or sauce.
