Spiced Meat Floss (sarawakian Serunding)
Spiced Meat Floss, also known as Sarawakian Serunding, is a popular dish in Sarawakian cuisine. It is a flavorful and aromatic meat floss that is perfect as a topping for rice, bread, or as a filling for buns.
Ingredients
- 500g lean beef, thinly sliced
- 4 shallots, finely sliced
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 turmeric leaf, thinly sliced
- 1 cup coconut milk
- 2 tbsp tamarind paste
- 2 tbsp sugar
- Salt to taste
Instructions
- In a pan, dry roast the thinly sliced beef over medium heat until it turns slightly brown and crispy. Remove from the pan and set aside.
- In the same pan, sauté the shallots, garlic, lemongrass, kaffir lime leaves, and turmeric leaf until fragrant.
- Add the roasted beef back into the pan and mix well with the aromatics.
- Pour in the coconut milk and tamarind paste. Stir and let it simmer until the liquid has reduced.
- Add sugar and salt to taste. Continue cooking until the meat floss is dry and fully coated with the spices.
- Remove from heat and let it cool before serving.
