Spiced Potato and Beef Stew (Toyugun Shorbası)

Ingredients

  • 1 pound beef, cut into cubes
  • 3 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 4 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the paprika, cumin, coriander, and turmeric, and cook for 1-2 minutes until fragrant.
  4. Add the diced potatoes, chopped tomatoes, and broth to the pot. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
  6. Adjust the seasoning if needed, and serve the Toyugun Shorbası hot, garnished with fresh cilantro.
