Spiced Potato and Beef Stew (Toyugun Shorbası)
Toyugun Shorbası is a traditional Azerbaijani spiced potato and beef stew that is hearty, flavorful, and perfect for a comforting meal on a cold day.
Ingredients
- 1 pound beef, cut into cubes
- 3 potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 4 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the paprika, cumin, coriander, and turmeric, and cook for 1-2 minutes until fragrant.
- Add the diced potatoes, chopped tomatoes, and broth to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, and serve the Toyugun Shorbası hot, garnished with fresh cilantro.
