ಆಲೂ ಕಾರಿ (Spiced Potato Curry) is a classic dish from Udupi Cuisine that is packed with flavors and is perfect for a comforting meal. This dish is a staple in Udupi households and is often served with steamed rice or roti.
Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 inch ginger, grated
- 2-3 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Now, add the tomatoes, ginger, and green chilies. Cook until the tomatoes turn mushy.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add the cubed potatoes and mix until they are coated with the masala.
- Add water, cover the pan, and let the potatoes cook until they are soft and the curry thickens.
- Garnish with fresh cilantro leaves and serve hot with steamed rice or roti.
