Spiced Potato Curry (ಆಲೂ ಕಾರಿ)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 inch ginger, grated
  • 2-3 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Now, add the tomatoes, ginger, and green chilies. Cook until the tomatoes turn mushy.
  4. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  5. Add the cubed potatoes and mix until they are coated with the masala.
  6. Add water, cover the pan, and let the potatoes cook until they are soft and the curry thickens.
  7. Garnish with fresh cilantro leaves and serve hot with steamed rice or roti.
