Spiced Potatoes (bombay Aloo)
Spiced Potatoes, also known as Bombay Aloo, is a popular Anglo-Indian dish that is bursting with flavor and aromatic spices. This dish is a perfect side to complement any main course or can be enjoyed on its own with some naan or rice.
Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat the vegetable oil in a pan and add the cumin seeds. Let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger and garlic paste, and cook for a minute.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Now, add the turmeric, cumin, coriander, and red chili powders. Mix well and cook for a couple of minutes.
- Add the cubed potatoes, season with salt, and mix until the potatoes are coated with the spices.
- Cover the pan and let the potatoes cook on low heat until they are tender, stirring occasionally.
- Garnish with fresh coriander leaves before serving.
