Spiced Potatoes, also known as Bombay Aloo, is a popular Anglo-Indian dish that is bursting with flavor and aromatic spices. This dish is a perfect side to complement any main course or can be enjoyed on its own with some naan or rice.

Spiced Potatoes (bombay Aloo)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the vegetable oil in a pan and add the cumin seeds. Let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger and garlic paste, and cook for a minute.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Now, add the turmeric, cumin, coriander, and red chili powders. Mix well and cook for a couple of minutes.
  6. Add the cubed potatoes, season with salt, and mix until the potatoes are coated with the spices.
  7. Cover the pan and let the potatoes cook on low heat until they are tender, stirring occasionally.
  8. Garnish with fresh coriander leaves before serving.
