Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 2 onions, finely sliced
  • 4 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 4 cups chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the sliced onions and cook until golden brown.
  2. Add the chicken pieces and cook until they are browned on all sides.
  3. Stir in the garlic, ginger, and all the ground spices. Cook for a few minutes until fragrant.
  4. Add the chopped tomatoes and cook until they have softened.
  5. Stir in the yogurt and cook for a few minutes.
  6. Wash the basmati rice and add it to the pot. Stir to combine with the chicken and spices.
  7. Pour in the chicken broth, season with salt and pepper, and bring to a boil.
  8. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
  9. Fluff the rice with a fork, garnish with chopped cilantro, and serve hot.
