Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 2 onions, finely sliced
- 4 tomatoes, chopped
- 1/2 cup plain yogurt
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground cinnamon
- 4 cups chicken broth
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the garlic, ginger, and all the ground spices. Cook for a few minutes until fragrant.
- Add the chopped tomatoes and cook until they have softened.
- Stir in the yogurt and cook for a few minutes.
- Wash the basmati rice and add it to the pot. Stir to combine with the chicken and spices.
- Pour in the chicken broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
- Fluff the rice with a fork, garnish with chopped cilantro, and serve hot.
