Spiced Rice (kenyan Pilau)
Spiced Rice, also known as Kenyan Pilau, is a flavorful and aromatic dish that is a staple in Kenyan cuisine. This dish is made with fragrant spices and is often served during special occasions and celebrations.
Ingredients
- 2 cups basmati rice
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 teaspoon turmeric
- 2 cups vegetable broth
- Salt to taste
Instructions
- Wash the rice and soak it in water for 30 minutes. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, cumin seeds, fennel seeds, cinnamon stick, cloves, and cardamom pods. Cook for 2-3 minutes until fragrant.
- Stir in the turmeric and drained rice. Cook for another 2-3 minutes, stirring constantly.
- Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and remove the whole spices before serving.
