Ingredients

  • 2 cups basmati rice
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • 1 teaspoon turmeric
  • 2 cups vegetable broth
  • Salt to taste

Instructions

  1. Wash the rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, cumin seeds, fennel seeds, cinnamon stick, cloves, and cardamom pods. Cook for 2-3 minutes until fragrant.
  4. Stir in the turmeric and drained rice. Cook for another 2-3 minutes, stirring constantly.
  5. Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and remove the whole spices before serving.
