Spiced Rice Porridge (Bubur Lambuk) is a traditional Malaysian dish that is often prepared during the fasting month of Ramadan. It is a comforting and nutritious porridge that is packed with aromatic spices and tender rice.
Ingredients
- 1 cup rice
- 6 cups water
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 star anise
- 1-inch ginger, grated
- 1 lemongrass stalk, bruised
- 1 cup coconut milk
- Salt to taste
Instructions
- In a large pot, combine the rice, water, cinnamon stick, cardamom pods, cloves, star anise, ginger, and lemongrass.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.
- Stir in the coconut milk and continue to simmer for another 15 minutes until the porridge thickens.
- Season with salt to taste and remove the whole spices before serving.
