Spiced Rice Porridge (bubur Lambuk)

Ingredients

  • 1 cup rice
  • 6 cups water
  • 1 cinnamon stick
  • 3 cardamom pods
  • 3 cloves
  • 1 star anise
  • 1-inch ginger, grated
  • 1 lemongrass stalk, bruised
  • 1 cup coconut milk
  • Salt to taste

Instructions

  1. In a large pot, combine the rice, water, cinnamon stick, cardamom pods, cloves, star anise, ginger, and lemongrass.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.
  3. Stir in the coconut milk and continue to simmer for another 15 minutes until the porridge thickens.
  4. Season with salt to taste and remove the whole spices before serving.
