Spiced Rice with Chicken, also known as Bahraini Chicken Machboos, is a flavorful and aromatic dish from Eastern Arabian cuisine. This traditional dish is a staple in Bahrain and is perfect for a hearty family meal or special occasions.
Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 cloves garlic, minced
- 2 inches ginger, grated
- 2 cinnamon sticks
- 4 cardamom pods
- 6 cloves
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- Lemon wedges for serving
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions until they are golden brown.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the tomatoes, garlic, ginger, cinnamon sticks, cardamom pods, cloves, turmeric, coriander, cumin, nutmeg, cayenne pepper, and salt. Cook for a few minutes until the tomatoes are softened.
- Add the rice and chicken broth to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Once cooked, remove the pot from the heat and let it sit, covered, for 10 minutes.
- Fluff the rice with a fork and transfer the machboos to a serving platter. Garnish with chopped cilantro and mint, and serve with lemon wedges.
