Spiced Rice With Chicken (bahraini Chicken Machboos)

Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 6 cloves
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 4 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onions until they are golden brown.
  2. Add the chicken pieces and cook until they are browned on all sides.
  3. Stir in the tomatoes, garlic, ginger, cinnamon sticks, cardamom pods, cloves, turmeric, coriander, cumin, nutmeg, cayenne pepper, and salt. Cook for a few minutes until the tomatoes are softened.
  4. Add the rice and chicken broth to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  5. Once cooked, remove the pot from the heat and let it sit, covered, for 10 minutes.
  6. Fluff the rice with a fork and transfer the machboos to a serving platter. Garnish with chopped cilantro and mint, and serve with lemon wedges.
