Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces

- 1 cinnamon stick
- 4 cups chicken broth
- 1/4 cup raisins
- 1/4 cup slivered almonds

Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the kabsa spice mix and cinnamon stick, then add the tomatoes and cook for a few minutes.
- Pour in the chicken broth and bring to a boil. Add the rice, raisins, and almonds, then season with salt and black pepper.
- Reduce the heat, cover the pot, and let it simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Fluff the rice with a fork and serve hot.
