Spiced Rice With Lamb (yemeni Mandi Laham)

Ingredients

  • 2 lbs lamb shoulder, cut into large pieces
  • 2 cups long-grain basmati rice
  • 4 cups water
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • Salt to taste
  • Fresh cilantro and lemon wedges for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and brown the lamb pieces on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Add the ground cumin, coriander, turmeric, cinnamon, and cardamom to the pot. Stir well to combine with the onions and garlic.
  4. Return the browned lamb to the pot and add 4 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours or until the lamb is tender.
  5. Remove the lamb from the pot and set aside. Strain the broth and reserve it for cooking the rice.
  6. Rinse the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot with the reserved broth. Season with salt and bring to a boil.
  7. Reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is tender and has absorbed all the liquid.
  8. Fluff the rice with a fork and transfer it to a serving platter. Arrange the tender lamb pieces on top of the rice.
  9. Garnish with fresh cilantro and serve with lemon wedges on the side.
