Spiced Rice with Seafood, also known as Qatari Machbous, is a flavorful and aromatic dish from Eastern Arabian cuisine. This traditional dish is a perfect combination of fragrant rice, tender seafood, and a blend of Middle Eastern spices.
Ingredients
- 1 lb mixed seafood (shrimp, fish, calamari)
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp Qatari spice blend (baharat)
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 4 cups chicken or seafood broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the Qatari spice blend, turmeric, cumin, coriander, and cinnamon to the pot. Stir well to combine with the onions and garlic.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Add the mixed seafood to the pot and cook for 2-3 minutes until slightly opaque.
- Stir in the basmati rice and coat it with the spice and seafood mixture.
- Pour in the chicken or seafood broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then sprinkle with chopped cilantro and parsley before serving.
