Spiced Semolina (fragrant Kharabath)
Spiced Semolina, also known as Fragrant Kharabath, is a popular dish from Uttara Karnataka Cuisine. It is a flavorful and aromatic dish made with semolina, spices, and vegetables, perfect for a hearty breakfast or a light meal.
Ingredients
- 1 cup semolina
- 2 tablespoons ghee
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1/2 inch ginger, grated
- 1/4 cup mixed vegetables (carrots, peas, bell peppers)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 3 cups water
- Fresh cilantro for garnish
Instructions
- Heat ghee in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add the chopped onions, green chili, and grated ginger. Sauté until the onions turn translucent.
- Add the mixed vegetables and sauté for a few minutes.
- Now, add the semolina and roast it for 3-4 minutes until it turns aromatic.
- Meanwhile, boil 3 cups of water in a separate pot.
- Pour the boiling water into the semolina mixture slowly, stirring continuously to avoid lumps.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Cover and cook for 5-7 minutes on low heat until the semolina is cooked and the mixture thickens.
- Garnish with fresh cilantro and serve hot.
