Ingredients

  • 1 cup semolina
  • 2 tablespoons ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 inch ginger, grated
  • 1/4 cup mixed vegetables (carrots, peas, bell peppers)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 3 cups water
  • Fresh cilantro for garnish

Instructions

  1. Heat ghee in a pan and add mustard seeds and cumin seeds. Let them splutter.
  2. Add the chopped onions, green chili, and grated ginger. Sauté until the onions turn translucent.
  3. Add the mixed vegetables and sauté for a few minutes.
  4. Now, add the semolina and roast it for 3-4 minutes until it turns aromatic.
  5. Meanwhile, boil 3 cups of water in a separate pot.
  6. Pour the boiling water into the semolina mixture slowly, stirring continuously to avoid lumps.
  7. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
  8. Cover and cook for 5-7 minutes on low heat until the semolina is cooked and the mixture thickens.
  9. Garnish with fresh cilantro and serve hot.
