Spiced Semolina Pongal (fragrant Kharabath Pongal)
Spiced Semolina Pongal, also known as Fragrant Kharabath Pongal, is a traditional dish from the Uttara Karnataka Cuisine. This savory and aromatic dish is perfect for a hearty breakfast or a comforting meal.
Ingredients
- 1 cup semolina
- 2 cups water
- 1/2 cup split yellow lentils (moong dal)
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1-inch ginger, grated
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon black peppercorns
- 1/4 cup cashews
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- In a heavy-bottomed pan, dry roast the semolina until it turns golden and aromatic. Set aside.
- In the same pan, dry roast the moong dal until it turns golden and aromatic. Set aside.
- Heat ghee in the pan, add cumin seeds, black peppercorns, and cashews. Sauté until the cashews turn golden.
- Add the chopped onions, green chilies, and grated ginger. Sauté until the onions turn translucent.
- Add the roasted semolina and moong dal to the pan. Mix well.
- Pour in the water, add turmeric powder, and salt. Stir well to combine.
- Cover the pan and let the pongal cook on low heat for about 10-15 minutes, or until the semolina and dal are fully cooked.
- Garnish with fresh coriander leaves and serve hot.
