Spiced Semolina Steamed Cake (fragrant Kharabath Idli)

Ingredients

  • 2 cups semolina
  • 1 cup yogurt
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 teaspoon ginger, grated
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon asafoetida (hing)
  • 1 tablespoon oil
  • Salt to taste
  • 1 teaspoon baking soda
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix semolina and yogurt. Let it rest for 15 minutes.
  2. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and turmeric powder.
  3. Add chopped onion, green chilies, and grated ginger. Sauté until the onions turn translucent.
  4. Add this mixture to the semolina-yogurt mixture. Mix well and add salt to taste.
  5. Grease the idli molds and sprinkle with fresh coriander leaves.
  6. Add baking soda to the semolina mixture and mix well. Pour the batter into the idli molds.
  7. Steam the cakes for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Once done, remove from the molds and serve hot with chutney or sambar.
