Spiced Semolina Steamed Cake (fragrant Kharabath Idli)
Spiced Semolina Steamed Cake, also known as Fragrant Kharabath Idli, is a traditional dish from Uttara Karnataka Cuisine. This savory and aromatic steamed cake is a popular breakfast or snack item in the region.
Ingredients
- 2 cups semolina
- 1 cup yogurt
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 teaspoon ginger, grated
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon asafoetida (hing)
- 1 tablespoon oil
- Salt to taste
- 1 teaspoon baking soda
- Fresh coriander leaves for garnish
Instructions
- In a bowl, mix semolina and yogurt. Let it rest for 15 minutes.
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and turmeric powder.
- Add chopped onion, green chilies, and grated ginger. Sauté until the onions turn translucent.
- Add this mixture to the semolina-yogurt mixture. Mix well and add salt to taste.
- Grease the idli molds and sprinkle with fresh coriander leaves.
- Add baking soda to the semolina mixture and mix well. Pour the batter into the idli molds.
- Steam the cakes for 15-20 minutes or until a toothpick inserted comes out clean.
- Once done, remove from the molds and serve hot with chutney or sambar.
