Spiced Tomato Soup (tangy Hyderabadi Tomato Rasam)

Ingredients
- 4 large tomatoes, chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 tablespoon tamarind paste
- Salt to taste
- 2 tablespoons oil
- 4 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pot and add cumin seeds and mustard seeds. Let them splutter.
- Add the chopped onions, garlic, ginger, and green chili. Sauté until the onions turn translucent.
- Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and garam masala. Cook until the tomatoes turn soft.
- Add tamarind paste and salt. Mix well.
- Pour in the water and bring the soup to a boil. Simmer for 10 minutes.
- Garnish with fresh coriander leaves and serve hot.
