Spiced Yellow Pea Stuffed Pastry (ghoogni Kachori)

Ingredients
- 2 cups yellow peas, soaked and boiled
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 cups all-purpose flour
- 2 tbsp ghee
- Water for kneading
- Oil for frying
Instructions
- In a pan, heat some oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add ginger-garlic paste, coriander powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
- Add the boiled yellow peas and cook for another 5 minutes. Remove from heat and let the filling cool.
- In a bowl, mix the all-purpose flour, ghee, and a pinch of salt. Knead into a stiff dough using water.
- Divide the dough into small balls and roll each ball into a small disc. Place a spoonful of the yellow pea filling in the center and seal the edges to form a stuffed ball.
- Flatten the stuffed balls slightly and deep fry in hot oil until golden and crispy.
- Remove from the oil and drain on paper towels. Serve the Spiced Yellow Pea Stuffed Pastry hot with chutney or sauce.
