Spicy Anchovies (sambal Ikan Bilis)

Ingredients

  • 1 cup dried anchovies
  • 5 shallots, sliced
  • 3 cloves garlic, minced
  • 5 red chilies, chopped
  • 2 tablespoons tamarind paste
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 tablespoons cooking oil

Instructions

  1. Rinse the dried anchovies and pat them dry with paper towels.
  2. Heat the cooking oil in a pan over medium heat.
  3. Add the dried anchovies and fry until they turn golden brown. Remove and set aside.
  4. In the same pan, add more oil if needed and sauté the shallots, garlic, and red chilies until fragrant.
  5. Add the tamarind paste, sugar, and salt. Stir well.
  6. Return the fried anchovies to the pan and mix until well combined.
  7. Remove from heat and serve hot.
