Ingredients

  • 500g beef, thinly sliced
  • 400g fresh noodles
  • 2 tomatoes, chopped
  • 2 green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 piece ginger, sliced
  • 2 tbsp soy sauce
  • 2 tbsp black vinegar
  • 1 tbsp sugar
  • 1 tsp Sichuan peppercorns
  • 1 tsp chili flakes
  • 4 cups beef broth
  • Salt, to taste
  • Vegetable oil

Instructions

  1. In a pot, heat some vegetable oil over medium heat. Add the garlic, ginger, and green onions. Sauté until fragrant.
  2. Add the beef slices and cook until they are no longer pink. Stir in the soy sauce, black vinegar, sugar, Sichuan peppercorns, and chili flakes.
  3. Pour in the beef broth and bring the mixture to a boil. Reduce heat and simmer for 30 minutes.
  4. Add the chopped tomatoes to the pot and continue to simmer for another 10 minutes.
  5. Cook the fresh noodles according to the package instructions.
  6. To serve, divide the cooked noodles into bowls and ladle the beef and broth over the noodles.
  7. Adjust the seasoning with salt if needed. Garnish with additional green onions, if desired.
