Ingredients
- 500g beef, thinly sliced
- 400g fresh noodles
- 2 tomatoes, chopped
- 2 green onions, finely chopped

- 1 piece ginger, sliced
- 2 tbsp soy sauce
- 2 tbsp black vinegar
- 1 tbsp sugar
- 1 tsp Sichuan peppercorns
- 1 tsp chili flakes
- 4 cups beef broth
- Salt, to taste
- Vegetable oil
Instructions
- In a pot, heat some vegetable oil over medium heat. Add the garlic, ginger, and green onions. Sauté until fragrant.
- Add the beef slices and cook until they are no longer pink. Stir in the soy sauce, black vinegar, sugar, Sichuan peppercorns, and chili flakes.
- Pour in the beef broth and bring the mixture to a boil. Reduce heat and simmer for 30 minutes.
- Add the chopped tomatoes to the pot and continue to simmer for another 10 minutes.
- Cook the fresh noodles according to the package instructions.
- To serve, divide the cooked noodles into bowls and ladle the beef and broth over the noodles.
- Adjust the seasoning with salt if needed. Garnish with additional green onions, if desired.
