Spicy and Sour Chicken Feet (酸辣鸡爪)

Ingredients

  • 1 kg chicken feet
  • 2 tbsp Sichuan peppercorns
  • 4 dried chili peppers
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1/4 cup soy sauce
  • 1/4 cup Chinkiang vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 cups water

Instructions

  1. Wash the chicken feet and trim off any excess skin or nails.
  2. In a large pot, blanch the chicken feet in boiling water for 5 minutes. Drain and set aside.
  3. In a wok, dry roast the Sichuan peppercorns and dried chili peppers until fragrant. Remove and set aside.
  4. Heat some oil in the wok, then sauté the ginger, garlic, and green onions until aromatic.
  5. Add the blanched chicken feet to the wok and stir-fry for a few minutes.
  6. Pour in the soy sauce, Chinkiang vinegar, sugar, salt, and water. Add the roasted Sichuan peppercorns and dried chili peppers.
  7. Simmer the chicken feet over low heat for 1 hour, or until the sauce has reduced and thickened.
  8. Transfer to a serving plate and serve hot or cold.
