Ingredients
- 1 kg chicken feet
- 2 tbsp Sichuan peppercorns
- 4 dried chili peppers
- 3 slices ginger
- 3 cloves garlic, minced
- 2 green onions, chopped
- 1/4 cup soy sauce
- 1/4 cup Chinkiang vinegar
- 2 tbsp sugar
- 1 tsp salt
- 2 cups water
Instructions
- Wash the chicken feet and trim off any excess skin or nails.
- In a large pot, blanch the chicken feet in boiling water for 5 minutes. Drain and set aside.
- In a wok, dry roast the Sichuan peppercorns and dried chili peppers until fragrant. Remove and set aside.
- Heat some oil in the wok, then sauté the ginger, garlic, and green onions until aromatic.
- Add the blanched chicken feet to the wok and stir-fry for a few minutes.
- Pour in the soy sauce, Chinkiang vinegar, sugar, salt, and water. Add the roasted Sichuan peppercorns and dried chili peppers.
- Simmer the chicken feet over low heat for 1 hour, or until the sauce has reduced and thickened.
- Transfer to a serving plate and serve hot or cold.
