Ingredients
- 100g glass noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup shredded cabbage

- 2 green onions, chopped
- 3 cups vegetable broth
- 2 tbsp soy sauce
- 2 tbsp rice vinegar

Instructions
- Soak the glass noodles in hot water for 5 minutes, then drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger, and cook until fragrant.
- Add the shredded cabbage, carrots, and green onions. Cook for 2-3 minutes until the vegetables are slightly softened.
- Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste. Bring to a boil.
- Add the soaked glass noodles to the pot and cook for 2-3 minutes until the noodles are tender.
- Season with salt and pepper to taste.
