Ingredients
- 300g lotus root, peeled and julienned
- 2 red chilies, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a small bowl, mix together soy sauce, rice vinegar, sugar, and sesame oil to make the dressing. Set aside.
- Heat vegetable oil in a pan over medium heat. Add the garlic and red chilies, and stir-fry until fragrant.
- Add the lotus root and stir-fry for 3-4 minutes until slightly softened.
- Pour the dressing over the lotus root and toss to coat evenly. Season with salt to taste.
- Remove from heat and let it cool to room temperature.
- Garnish with fresh cilantro before serving.
