Spicy Axone Pork Curry

Ingredients

  • 500g pork, cut into bite-sized pieces
  • 1 cup axone (fermented soybean)
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.
  2. Add the pork pieces and cook until they are browned on all sides.
  3. Stir in the axone, tomatoes, green chilies, and spices. Cook for a few minutes.
  4. Pour in the water, cover the pan, and let the curry simmer for 45-50 minutes, or until the pork is tender.
  5. Adjust the seasoning and serve hot with steamed rice.
