Ingredients
- 2 cups dried kidney beans, soaked overnight
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, diced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups vegetable broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is soft and translucent.
- Stir in the diced tomatoes, paprika, cayenne pepper, cumin, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Add the soaked kidney beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
- Adjust the seasoning if needed, and serve the spicy bean stew hot.
