Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 3 cups beef broth
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onion, garlic, and ginger until softened.
- Stir in the paprika and cayenne pepper, then add the beef back to the pot.
- Pour in the diced tomatoes, kidney beans, and beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
- Adjust seasoning if needed, then serve hot.
