Spicy Beef and Bean Stew (Ragoût de Bœuf et de Haricots Épicé)

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 3 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion, garlic, and ginger until softened.
  4. Stir in the paprika and cayenne pepper, then add the beef back to the pot.
  5. Pour in the diced tomatoes, kidney beans, and beef broth. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
  7. Adjust seasoning if needed, then serve hot.
