Ingredients
- 500g beef, cut into cubes
- 2 eggplants, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 2 tomatoes, chopped
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 4 cups beef broth
- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Stir in the tomato paste, paprika, cayenne pepper, ground ginger, ground coriander, and salt. Cook for 2 minutes, stirring constantly.
- Add the diced eggplants, chopped tomatoes, and browned beef back into the pot. Pour in the beef broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for 45 minutes to 1 hour, or until the beef is tender and the eggplants are soft.
- Adjust the seasoning if needed, then serve the spicy beef and eggplant stew hot, garnished with chopped fresh parsley.
