Spicy Beef and Eggplant Stew (Ragoût de Bœuf Épicé aux Aubergines)

Ingredients

  • 500g beef, cut into cubes
  • 2 eggplants, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
  3. Stir in the tomato paste, paprika, cayenne pepper, ground ginger, ground coriander, and salt. Cook for 2 minutes, stirring constantly.
  4. Add the diced eggplants, chopped tomatoes, and browned beef back into the pot. Pour in the beef broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and let the stew simmer for 45 minutes to 1 hour, or until the beef is tender and the eggplants are soft.
  6. Adjust the seasoning if needed, then serve the spicy beef and eggplant stew hot, garnished with chopped fresh parsley.
