Ingredients
- 1 lb (450g) beef, thinly sliced
- 2 small eggplants, cut into cubes
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon chili flakes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat.
- Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.
- Heat the remaining tablespoon of oil in the same pan. Add the minced garlic, sliced onion, and cubed eggplants. Stir-fry for 5 minutes until the vegetables are tender.
- Add the sliced red bell pepper, soy sauce, oyster sauce, chili flakes, ground cumin, and paprika to the pan. Stir well to combine.
- Return the cooked beef to the pan and toss everything together. Cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste.
- Serve the spicy beef and eggplant stir-fry hot, accompanied by steamed rice or crusty bread.
