Spicy Beef and Eggplant Stir-Fry (Sautée de Bœuf Épicé aux Aubergines)

Ingredients

  • 1 lb (450g) beef, thinly sliced
  • 2 small eggplants, cut into cubes
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon chili flakes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat.
  2. Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.
  3. Heat the remaining tablespoon of oil in the same pan. Add the minced garlic, sliced onion, and cubed eggplants. Stir-fry for 5 minutes until the vegetables are tender.
  4. Add the sliced red bell pepper, soy sauce, oyster sauce, chili flakes, ground cumin, and paprika to the pan. Stir well to combine.
  5. Return the cooked beef to the pan and toss everything together. Cook for an additional 2-3 minutes to heat through.
  6. Season with salt and pepper to taste.
  7. Serve the spicy beef and eggplant stir-fry hot, accompanied by steamed rice or crusty bread.
